Cookin' From The Doghouse | Basil Tomato Pesto Pasta

This is a great summer recipe, and not just because it'll get you out of the doghouse. Basil is in season, and there is almost no cooking involved! So easy your kid could probably make it. But don't pawn it off because-- well, you know why. 
  
Prep time: 30 minutes
Level of difficulty: Easy
Level of enjoyment: Huge
  
Ingredients:
Penne pasta
Fresh basil 1-2 bunches
Fresh roma tomatoes-2
Sundried tomatoes
Pine nuts
Garlic
Parmesan cheese -shredded
Baguette
Olive oil
Butter
Italian seasoning
Salt & Pepper 
  
Directions:
In a blender or food processor, blend basil, tomatoes, sundried tomatoes, garlic, and pine nuts. Prior roasting of pine nuts is optional. Add salt to taste. Cook pasta according to package directions, but reserve a cup of the pasta water before straining. Slice baguette, dipping one side of each piece in olive oil and garlic mixture. Sprinkle Italian seasoning on to bread, and broil until toasted. After draining pasta, stir in pesto mixture, adding some reserved pasta water to thin. Add in shredded parmesan to taste. Voila!
